How to make vada paav at home

Vada pav is more than just a snack—it’s an emotion, especially for people in Mumbai. Often called the “Indian burger,” this delicious street food consists of a spicy potato fritter (vada) placed inside a soft pav (bread bun), layered with chutneys and fried green chilies. The best part? You don’t have to travel to Mumbai to enjoy it. You can easily make authentic, mouth-watering vada pav right in your own kitchen.

Ingredients You’ll Need

Before you start cooking, gather all the ingredients:

For the Vada (Potato Filling):

  • 4 medium-sized potatoes (boiled and mashed)

  • 2–3 green chilies (finely chopped)

  • 1-inch ginger (grated)

  • 5–6 garlic cloves (crushed)

  • 1 teaspoon mustard seeds

  • 8–10 curry leaves

  • ½ teaspoon turmeric powder

  • Salt to taste

  • 2 tablespoons oil

  • Fresh coriander leaves (chopped)

  • Juice of half a lemon (optional)

For the Batter:

  • 1 cup gram flour (besan)

  • ½ teaspoon turmeric powder

  • ½ teaspoon red chili powder

  • Salt to taste

  • Water (to make a thick batter)

For Assembling:

  • Pav (bread buns)

  • Green chutney (coriander-mint)

  • Tamarind chutney (optional)

  • Dry garlic chutney (a must for authentic taste)

  • Fried green chilies

  • Butter (optional)


Step 1: Preparing the Potato Filling

Start by heating oil in a pan. Add mustard seeds and let them splutter. Then add curry leaves, green chilies, ginger, and garlic. Sauté for a minute until aromatic.

Now, add turmeric powder and mix well. Add the mashed potatoes and salt. Stir everything together so the spices are evenly mixed with the potatoes.

Turn off the heat and add chopped coriander leaves and lemon juice for a slight tangy flavor. Let the mixture cool slightly, then divide it into small balls and flatten them gently. These will be your vadas.


Step 2: Making the Batter

In a bowl, combine gram flour, turmeric powder, red chili powder, and salt. Gradually add water and mix well to form a smooth, thick batter. The consistency should be such that it coats the potato balls properly without dripping too much.


Step 3: Frying the Vadas

Heat oil in a deep pan for frying. Once the oil is hot, dip each potato ball into the batter, ensuring it is fully coated.

Carefully drop the coated balls into the hot oil. Fry them on medium heat until they turn golden brown and crispy. Remove and place them on paper towels to absorb excess oil.


Step 4: Preparing the Chutneys

The chutneys are what give vada pav its signature taste.

  • Green Chutney: Blend coriander leaves, mint leaves, green chilies, garlic, salt, and lemon juice.

  • Dry Garlic Chutney: Mix roasted garlic, coconut, red chili powder, and salt.

  • Tamarind Chutney (Optional): A sweet and tangy chutney made from tamarind pulp and jaggery.


Step 5: Assembling the Vada Pav

Take a pav and slice it horizontally, but don’t cut it completely.

Spread green chutney on one side and tamarind chutney (if using) on the other. Sprinkle dry garlic chutney generously inside.

Place a hot vada in the center. You can also lightly press it to fit perfectly. For extra flavor, add a fried green chili on the side.

If you like, you can toast the pav with a little butter on a pan before assembling—it adds a rich taste and slight crispiness.

  • Use fresh pav: Soft and fresh bread enhances the taste.

  • Balance spices: Adjust chilies and garlic according to your spice preference.

  • Fry at the right temperature: Too hot oil will burn the batter, and too cold oil will make it soggy.
